Should I skip premium quality whetstones, and just use a brick?
You must have watched my brick video then.
Sharpening on a brick is POSSIBLE, though maybe not advisable, if you are starting out. Mainly, due the fact you do not know how a brick will handle certain knives. I am not a brick expert, but I imagine there are different qualities of bricks available. Even though I think everyone should attempt to sharpen on a brick (just for fun), you should get a quality whetstone for your knives. Relying on nothing but a brick to get a good edge can become extremely frustrating, and cause you to give up learning how to hand sharpen altogether.
