When or how often should I strop?

It depends on your own needs. I strop my knives once week. I have advised a number of my viewers who are working chefs, to strop daily before their shifts begin, and have maintained great cutting performance throughout their work day. Results and needs will vary, so just access what level of performance you desire, and see how much time you have to dedicate to maintaining your knives, and their cutting performance.
